I’m very excited! I bought an 8 qt stand mixer that has a pasta maker attachment. Bought some Bob’s red mill semolina flour with olive oil and eggs. Was afraid i would just have a pan full of cloudy water but instead great pasta! Arrabbiata sauce and some spicy chicken makes a fun ragù, fresh pepper and fresh pecorino romano, mamma mia!!

Why go through all that trouble then serve it like Denny’s with an anemic looking plate of pasta with a sauce hat? Toss your pasta in the sauce the last minute or two so it all gets coated. This is white bread American style.

Pasta into the sauce in a pan, never sauce onto the pasta
The reason is you lose out on the sauce binding to the starches rapidly as the pasta cools. I can taste the difference when restaurants do this

There would be multiple fines and possible jail time in Italy for following but don’t let this discourage you.
1)plastic fork and paper plate after all that work you have to love the artwork you created. Treat t it well and treat yourself well. Use proper fork and plate.
2)mix pasta and sauce in pan prior to plating the dish
3)looks like you sprinkled pepper after plating the dish? Correct flavor/add salt or pepper to sauce to get taste you want prior to plating the dish.
