    True Amatriciana is amazing.

    Many Italians actually do the wrong Amatriciana, with onion. It’s still very good but it’s very different.

    Suggestion for next time: finish the pasta in the sauce with a little pasta water.

    That’s where the magic alchemy of pasta and sauce happens.

    The guanciale does make it!!! Learned this recipe on Stanley Tucci’a show and it’s a family favourite

    Now you have to learn to incorporate the sauce with the pasta on the heat before you plate it. Pasta water is your best friend
