BRUSCHETTA
CHEF AANAL KOTAK
PREP TIME: 5-10 mins
COOKING TIME: 20-25 mins
INGREDIENTS:
FOR STUFFING:
โข 3-4 no. tomato (chopped) (seedless)
โข 10-12 nos. basil leaves (chopped)
โข 2 tbsp garlic (chopped)
โข 1 tsp oregano
โข 1 tsp chili flakes
โข Salt as per taste
โข 1 tsp black peppercorns (crushed)
โข 2 tbsp olive oil
FOR FRENCH LOAF:
โข 1 nos. French loaf
FOR GARLIC OIL:
โข 1 tbsp garlic (chopped)
โข 4 tbsp olive oil
METHOD:
FOR STUFFING:
โข First cut the tomatoes in half, then remove the seed part, slice the tomatoes and chop into cubes.
โข Further place the basil leaves on top of each other, roll it and chop it also.
โข In a bowl take chopped tomatoes, garlic, oregano, chilli flakes, salt as per taste, 2 tbsp chopped basil leaves, black peppercorns, olive oil. Mix it and keep it aside for further use.
FOR GARLIC OIL:
โข Add chopped garlic in olive oil and keep it side for further use.
FOR FRENCH LOAF:
โข First of all cut the French loaf in slant slices.
FOR BAKED BRUSCHETTA:
โข Place the bruschetta bread slices on a baking tray lined with butter paper.
โข Brush the above-prepared garlic oil on both sides on the bread, sprinkle some grated parmesan cheese, and bake the bread at 200 degrees for 5 minutes or till the cheese melts.
โข Now to assemble baked bruschetta: just place the above-prepared tomato stuffing on top and enjoy the baked bruschetta.
FOR TAWA TOASTED BRUSCHETTA:
โข First brush the garlic oil on one side of the bread place that side on the tawa, and again apply oil on the other side.
โข Toast the bread on both side till crispy and golden brown.
โข Now to assemble the tawa-toasted bruschetta: place the tomato stuffing on the bread, and grate a little parmesan cheese on top.
โข Enjoy the tawa toasted bruschetta.
