Saw the video on making carbonara just now, and had made some for myself last night. My recipe is almost identical to our friend the Roman!
8 oz bucatini 2 oz chopped pancetta 1/2 cup + extra pecorino romano olive oil salt fresh cracked pepper (and dare I say it…a few cloves of garlic… I know not traditional)
cook the pasta al dente, while thats going on fry the pancetta til crisp. Remove the meat. Add the garlic (dont burn it!) toss pasta in hot pancetta grease, toss pasta with egg+cheese mixture in a bowl, not the pan.
Garnish with more cheese and some chopped parsley!
