Overall you failed the cream which is the most important stuff in the cacio e pepe. Few days ago one guy asked how to make a proper cacio e pepe, i Just answered him, if you are interested you can read the answer, I gave him some tricks.
Overall what is wrong with your cacio e pepe is : Your cream is “lenta” that means that is not dense enough. There are some “grumi” means that some pecorino is overcooked and/or few amid in the cream. Need more Pepe. Pasta is not very “legata” with the cream, hard to translate, let’s say that the “mantecazione” could have been done better.
Overall is not bad, since you are not Italian I am not kidding you deserve 9/10. If you were from Milan I would have gave you 6/10 but I came from Rome where this pasta has been invented. Every single person here have done at least few times cacio e pepe, so you learn the tricks, you follow suggestions of skilled friends or parents and the outcome is usually better then your ( no offense )
