INGREDIENTS
1 provolone (smoked mozzarella) of 250 g
240 g of peeled tomatoes
½ red onion
basil
extra virgin olive oil
fine salt
After removing the provolone from its preserving water, cut it into slices (approximately 4) and drain on absorbent paper.
Meanwhile, chop the onion and let it simmer over low heat for 10 minutes in the oil and add the basil stalks. Then fray the peeled tomatoes by hand directly in the pan, add some salt and cover with the lid and cook for 20-30 minutes.
Dip the slices of provolone in, cover with a lid and let it cook a few more minutes over low heat. As soon as the provolone has softened, add some chopped basil and enjoy it with bread.
If you like a more full-bodied sauce, instead of peeled tomatoes, use tomato puree. You can add chili and / or black pepper to taste.

I really love to cook from " scratch". This looks so good. Smple flavorful easy, tasty and cheap. ( Adjust for inflation). Someday im gonna compile my cookbook, THE HEAPY CHEAPY HAPPY HIPPIE BOOK. OR 15 WAYS TO USE, CORN NEAL AND NOT BREAK THE BANK!!;
