    Can i give you a couple of suggestions? I see you have some quality saffron, you could have used like one fifth of that amount and the result would still have been perfect. Risotto is a cheap dish, with that mich saffron you are making it a lot more expensive than it needs imo. Other thing, when you add ingredients to mantecate just stir roughly and leave it rest a couple of minutes, there is no need to keep stirring
