INGREDIENTS
360g rigatoni pasta
a small bunch of fresh oregano
1 garlic clove
2 tbsp tomato paste
250g heavy cream (single cream)
80g Parmigiano cheese
extra virgin olive oil
salt

Finely chop your fresh oregano and garlic (you can use fry oregano instead). In a pan over medium low heat, add chopped garlic and oregano and sizzle for a couple of minutes.

Add tomato paste and cook for a couple of mins. Add one ladleful of boiling water and cook for another minute then finally incorporate your heavy cream. Simmer for 5 more mins then season with salt.

In the meantime, boil your pasta in some salted water, drain and add it to your sauce. Toss well over the heat to combine all the flavours together. Turn heat off, add your grated cheese and stir one last time.
