    Colomba Pasquale (Easter Dove):

    there are legends that would like to trace this Easter cake back to the Lombard period, even to the Lombard king Alboin who during the siege of Pavia (mid-6th century) was offered, as a sign of peace, a sweet bread in the shape of a dove.

    COLOMBA:

    1๏ธโƒฃ 12 gr of yeast [ 12 gr di lievito di birra ]

    2๏ธโƒฃ 180 ml of water [180 ml di acqua]

    3๏ธโƒฃ 12 gr of honey [ 12 gr di miele]

    4๏ธโƒฃ 130 gr of sugar [ 130 gr di zucchero]

    5๏ธโƒฃ 2 egg yolks + 1 egg [ 2 tuorli + 1 uovo intero ]

    6๏ธโƒฃ 520 gr of manitoba flour [ 520 gr di farina manitoba ]

    7๏ธโƒฃ grated zest of 1 lemon and 1 orange [ buccia grattugiata di 1 limone e di 1 arancia ]

    8๏ธโƒฃ 100 gr of butter[ 100 gr di burro ]

    9๏ธโƒฃ3 gr of salt [ 3 gr di sale ]

    ๐Ÿ”Ÿ 100 gr of chocolate chips [ 100 gr di gocce di cioccolato ]

    1๏ธโƒฃ1๏ธโƒฃ 150 gr of white chocolate [150 gr di cioccolato bianco]

    1๏ธโƒฃ2๏ธโƒฃ 200 gr pistachio cream [200 gr di crema al pistacchio]

    1๏ธโƒฃ3๏ธโƒฃ pistachio and sugar grains as needed [granella di pistacchio e di zucchero q.b]

    The dough must be prepared a day before because it has to rise overnight.
