It’s a basic risotto with champion (sounds weird in English) and portobello mushrooms and onions. I just used some chicken stock, white wine and some grana padano.
I’m Finnish so I don’t know how “authentic” this is, but I just like these mushrooms and I honestly love grana padano more than parmigiano reggiano haha I also grated four cloves of garlic when it was time to mix the mushrooms and onions in so the garlic is definitely present here. Also added some soy sauce, MSG and black pepper so it’s definitely not the most authentic thing.
Ever since I started learning more about Italian food, risotto has been my ultimate comfort food 🙂
Edit: I also have parsley, basil, mint and cilantro growing so I had to try all of them as an experiment. I honestly love using a combo of cilantro, parsley and basil for this
