    My dads favorite cake,
    Coconut cake with sour cream frosting!

    3 cups cake flour.

    1.5 teaspoons baking powder

    1 teaspoon soda.

    1/2 teaspoon salt.

    2 cups granulated sugar.

    1 cup sour cream room temp.

    1/2 coconut milk.

    1 cup butter room temp.

    4 eggs.

    1 teaspoon vanilla.

    3/4 cup shredded coconut

    Butter and flour 4 eight inch cake layer baking pans
    Pre heat oven to 350 degrees

    Sift dry ingredients into a separate bowl

    Beat butter and sugar until fluffy and lite in color, add eggs one at time
    Add sour cream , add vanilla and slowly fold in or beat in flour.

    Equally fill each cake pan, bake for at least 20 to 25 minutes or until a tooth pick comes
    out clean. Cool completely before filling.

    3 sticks butter room temp unsalted.

    16 ounces cream cheese room temp.

    2 cups sour cream room temp.

    1 can sweetened condensed coconut milk.

    1 cup powdered sugar

    Whip butter with cream cheese until very fluffy, add powdered sugar,
    sour cream and condensed milk. Slowly fold in coconut flakes.
    Chill for at least two hours before using.
