For a loaf of about 830 g

Flour 0 500 g
Water 320 g
Salt 10 g
Fresh brewer’s yeast 10 g
White sesame seeds to taste
Black sesame seeds to taste

Mix all the ingredients leaving the salt at the end. Obtain a smooth ball and let it rise in a bowl for 3 hours or until doubled.

Get a large flat plate, such as those for pizza. Pour in the black sesame seeds and create a spiral with your finger. Pour the white sesame seeds into a food bag, make a small hole in the corner of the bag and fill the empty space of the black sesame seeds with the white seeds.

Moisten the leavened loaf on a wet cloth and pass it on the spiral of seeds. Bake in a static oven at maximum power 480°F (250°C) for 45 minutes.
