Ingredients
– White asparagus, 3-4 spears per person as a side (if you can’t find white asparagus this recipe also works well with green)
– 40g serrano ham per person
– 1 tbsp dijon mustard
– 2 tbsp extra virgin olive oil
– 3/4 tbsp honey
– Juice on 1/2 a lemon
– Small bunch chives
– Salt to taste
Method
1. This recipe couldn’t be simpler, start by getting a large pot of salted boiling water on the heat.
2. Mix the dijon, olive oil, lemon juice and honey and season with salt.
3. Cut the bottom of the asparagus off (3-4cm). Ff it still feels woody to cut through, you might need to take a little bit more off.
4. Place them in your seasoned boiling water for 2-3 minutes or until just cooked, but you still want them to have some bite.
5. Dress the asparagus with the dressing you made, then lay on the serrano ham and garnish with finely cut chives.

They are also very popular in the South of the Netherlands. Usually served with melted butter, cooked ham and an egg. They are part of the traditional Easter dinner as well.
It is more popular in Spain its lovely they eat it with salmon in white vinegar my favourite starter of all time.

Andy, have you ever heard of the technique where you bend the asparagus stocks towards the bottom and they break at the perfect spot to remove the woody portion of the stock? It’s something my grandma taught me and it always works perfectly. They usually break around 2 inches up from the bottom and I never get woody asparagus. When my girlfriend guesses and cuts the bottoms, there’s always stocks that end up with woody portions.

I'm German and it was a little confusing to hear you say "normal green asparagus" cause for us, the white one is the normal type. My family usually eats it with potatoes, ham and a nice hollandaise

Master tipp. Don‘t boil it in water. Wrap it in foil and but it in the oven to boil it in the own juice. Tastes way better!
