There is a huge misconception on the use of garlic in Italian cuisine.

I will say that we Italian-Americans use more garlic than my Italian family does. They claim it’s because their garlic tastes better than the garlic we get in the states so they don’t need as much *shrug*

Maby I don’t know shit about shit. But, my father came to America from Italy when he was a young boy with my grandparents who were in their early 30’s. They cooked what I would consider to be traditional dishes (not just red sauce on Sunday. Not that there is anything wrong with that of course!) and the amount of garlic they used could choke an elephant 😂😂

I’m Cajun. I put garlic on everything, including my arm and my sauces.

Plus, after seeing what the world does to “Cajun” food I don’t care. I try to be as traditional as possible when cooking stuff from other cuisines, but eventually it’s fun to put your own twist. Plus I’ve been all over Italy and tasted a good bit of garlic.
