    Not sure what’s going on here. It looks like a cheesy pasta, topped with bacon. I’m sure it’s yummy, but doesn’t seem like carbonara.

  2. Try with guanciale, a little roast on a slick pan and while it release the grease you can choose the roast level from little brown to crunchy.

    Guanciale quality is very important, if you can’t have a good one then bacon is not a really big crime.

    Still you won’t have visa to Italy tho.

    stop crying about the fucking pancetta. i’m italian and i dont like guanciale, i prefer pancetta, sue me you crybabies. people still put fucking cream, parsley and peas into carbonara but you would much rather cry about the meat choice which is the least worrying part. classic italian behavior: if something looks good, better critique the SINGLE odd thing rather than appreciating the whole. way to go boys.
