PIZZA SAUCE:
– Just add salt, a little sugar and garlic/basil to your canned tomatoes

NEOPOLITAN PIZZA DOUGH
332g bread flour
210g water (85% hydration – 282g)
10g salt
0.5g (1/4tsp) yeast
Do a 2x batch for 4 doughs
(250-275g portions)
– mix everything together until no longer dry, rest 30 minutes, then mix again
– let it ferment at room temperature for 18-22hrs (this is pretty flexible!)
– portion and let it cold ferment for 1 to 2 days
– bring to room temperature before stretching into pizza (takes around 2 hours)
