This is step by step instructions on how to make a green pesto sauce recipe with kale and pine nuts. Pasta of the day ideas!
This is another very easy vegetarian pasta recipe you can make in no time.
Ingredients: ( seving 6 )
Pesto: ( ~2 ½ cups of pesto )
Fresh basil leaves – 2 cups
Fresh kale leaves – 2 cups
Pine nuts – ¾ cups
Garlic – 3 cloves
Salt & pepper – to taste ( I have used 2 tsp of salt )
Extra virgin olive oil – ½ cups
Chili powder – 1 ½ tsp
Fresh or frozen peas – 1 cup

Pasta – 1.1lb ( 17.6 oz )
Toppings: lemon juice ( from 1 small lemon ), basil, pine nuts, peas, fresh parmesan cheese and chili flakes. If you want extra protein, add some meatballs or chicken
Preparation steps:
In a blender or food processor mix all pesto ingredients on medium speed till desired texture for about 1 min. If you want to use this pesto for other dishes, put it into an airtight container and keep in the fridge. It lasted me about 1 ½ weeks.
Cook pasta following instructions on the packaging. I am using Pacchiri pasta, but you can try other variations as well. Any Italian pasta will go well with this pesto sauce. Drain pasta and leave ½ cup of pasta water, we will use it later.
In a large bowl mix cooked pasta with ¾ cup of pesto, pasta water and lemon juice.
Top it off with fresh basil leaves, peas, pine nuts, parmesan cheese and chili flakes.
