Another hangover pasta night having spent the weekend away at a wedding. Whipped up this quick pasta dish with leftovers in the friddge, tbh it BANGED, full of umami vibes. Also used the @sozyefoods nish sauce which I tried at the @guildoffinefood great taste awards last week and it’s soooo yummy I’m obsessed! Away if you want to make this at home…
Serves 2 | 20 mins
2 tbsp olive oil, the good kind
1 shallot / 1/2 an onion, sliced
4 garlic cloves, sliced
1 pinch anchovies, fresh and thd good kind chopped
1/2 tin chopped tommies
1 tbsp capers
Handful of bucatini – 2nd best pasta after orzo, FACT!
1/2 tbsp fish sauce / @sozyefoods nish sauce
1/2 tbsp @sriracha_fg
1 tbsp balsamic vinegar
1 mug pasta water
1/4 parmesan block, grated
Sprinkle parsley
Sprinkle crispy onions
1. Fry shallot in olive oil until just soft on medium
2. Add garlic and cook off.
3. Add tomatoes, anchovies, capers and cook down
4. Boil the bucatini in salted water until just soften, remove a mug of pasta water.
5. Add fish sauce, sriracha and balsamic to the sauce abd taste and adjust to your palate
6. Add the pasta and pasta water to the sauce and mix with grated parmesan.
7. Serve with more cheese, herbs and crispy onions
