INGREDIENTS FOR THE CREAM
1 egg
1 yolk
70g sugar
250g mascarpone
150ml semi-whipped cream
Cook eggs, egg yolk and sugar in a bain-marie until the mixture reaches 180ยฐF (82ยฐC). Whip until it becomes cold, then add mascarpone and finally the semi-whipped cream.
