Pesto Recipe
3 cups basil
2-3 cloves garlic
3 tbsp pine nuts (or walnuts)
1/2 cup olive oil
1/2 cup parmesan
Salt& Pepper
Pasta Recipe
Rigatoni pasta(or pasta of choice)
1 tbsp butter
1 tomato diced
1/3 – 1/2 cup of pesto
1/2 cup heavy cream
Parmesan
Salt, pepper & chili flakes
Splash of pasta water
Pesto Pasta Recipe Instructions
Start by pulsing your basil, nuts and garlic in a food processor. Slowly add in olive oil while blending. Either stir in grated parmesan or cut into cubes and add to your food processor and blend until smooth. Season with salt and pepper
Boil pasta reserving some of the pasta water. Melt butter in a sauce pan and add your pesto and cream. Simmer for 1-2 minutes and season. If you want more sauce you can add some pasta water. Add pasta and top with more parmesan. Enjoy!
