1 box @barillaus collezione rigatoni
1 ½ cup guanciale, cut thick julienne [easy to find online, but if you don’t have access substitute pancetta]
1 cup romano cheese
A good amount of black pepper, coarse and possibly toasted in a dry skillet
Place a pot of water to boil; cook pasta according to directions.
Meanwhile render guanciale low and slow in a skillet until crispy, add one cup of pasta cooking water and soon after 2 minutes undercooked pasta. Reduce water over high heat.
