RECIPE
Ingredients:
4 Tablespoons butter
2 Tablespoons Olive Oil
1/2 Onion, chopped
1 lb fresh mushrooms (baby Bella, cremini or button)
2 Tablespoons dry white wine (optional)**
2 Teaspoons fresh thyme, chopped
2 Tablespoons fresh parsley, chopped
4 cloves of garlic, minced
Salt & Pepper to taste
**Use a good quality white wine that you would drink, ie Pinot Gris, Chardonnay, or a Sauvignon Blanc
Directions:
Heat butter and oil in a large pan over medium high heat.
SautΓ© onions until softened and slightly translucent, approximately 4 minutes.
Add mushrooms and cook for 5 minutes, stirring frequently, until golden brown and slightly crispy.
Pour wine and reduce for 3 minutes.
Add thyme, 1 tablespoon parsley, and garlic. Cook for a minute, or until garlic becomes fragrant.
Season with freshly ground pepper and salt, to taste.
Sprinkle remaining parsley on top and serve.
