▪4-6 thin-sliced chicken cutlets
▪4 eggs
▪1 1/2 cup plus
breadcrumbs (or make own)
▪1 cup plus olive oil
▪flour to coat
▪1 tsp salt (will need more salt if you make own breadcrumbs)
▪1/2 tsp black pepper
