Ingredients :
4 Minced veal (Tendriade)
2 muffin type buns
8 candied tomatoes (or dried)
1 jar of black tapenade
4 quail eggs
200 g Mozzarella
4 sprigs of basil
Olive oil
Step 1: Cut the breads in 2. Grill them and spread each half with tapenade.
In a non-stick pan, heat a drizzle of olive oil and brown the minced veal.
Step 2: Top them with a nice slice of mozzarella.
In a small pan, fry the quail eggs in a drizzle of oil.
Step 3: Compose the burgers: on the half buns topped with tapenade, layer the meat, eggs and dried tomatoes.
Decorate with basil and serve with polenta fries.
