This nduja risotto recipe is both simple to make and quick to make. Hardly any preparation time and as soon as the rice is cooked the dish is done. Nduja risotto is delicious and quite rich due to the burrata cheese, so maybe best used as a starter for four people, or as a main for two.

Ingredients
200g carniroli rice (or arborio)
1 1/2 tbsp olive oil
2 large shallots finely chopped (or half a medium onion)
1 clove of garlic finely chopped
200ml dry white wine
1 litre of chicken stock ( I used around 700ml of it)
120g nduja sausage meat
1/2 a ball of burrata cheese (around 75g)
A good handful of parmesan cheese
