Peppers Siciliano is a New York Italian specialty that must have been invented by American Italians who grew up with the flavors of southern Italy. Red bell peppers are roasted and sliced. Garlic, anchovies, and olive oil are sautéed the peppers added, then capers, basil, and olives. White wine is added and chicken stock as well. When reduced the dish is covered with breadcrumbs and placed under the broiler until it’s golden brown on top.
