Penne arrabbiata is a classic Italian spicy pasta dish and I’m going to show you how it’s made in the authentic way. Arrabbiata literally means angry in Italian but in the context of cooking, it’s referred to as “angry pasta” because it’s very spicy and hot! It’s a quick and easy to make pasta which you and your family are going to love. You can adjust the spiciness to your taste and enjoy it very hot or mild but regardless, it’s a very delicious meal! INGREDIENTS
400g penne pasta
800ml of crushed tomatoes (San Marzano)
1/4 cup olive oil
1-2 red chilli peppers
2 tablespoons of chopped parsley
2-3 Cloves of garlic
1-2 tablespoons of salt
2 tablespoons of Parmigiano-Reggiano or Pecorino Romano in the end

INSTRUCTIONS
1. Cut chilli peppers with seeds in. Finely cut chop parsley and keep stems aside. Cut 1 garlic clove into quarters.
2. Pour 1/4 to 1/3 cup olive oil in skillet on low heat. Place chilli peppers, chopped parsley and stems and squeeze 2 garlic cloves. Pour crushed tomatoes and mix together. Add salt adjusted to taste. Watch video for instructions on making the sauce.
3. Boil a large pot of salted water and add sufficient salt for the size of pot and cook the penne pasta.
4. Pour 1-2 ladle spoons of pasta water in your sauce. Watch video for how to get to the creaminess of the sauce.
5. Cook penne pasta until al dente and transfer to your skillet using a spider strainer skimmer.
6. Add chopped parsley.
7. Towards the end, add Parmigiano-Reggiano or Pecorino Romano, drizzle olive oil (4 tablespoons) and serve. Watch video for how cheese and olive oil are applied.
