4-6 peaches
4 tablespoons balsamic vinegar
1 cup heavy whipping cream
6 oz mascarpone cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
Whip cream until stiff peaks form, then add sugar and vanilla, mix until incorporated. Add mascarpone cheese and mix until firm and uniform.
Cut peaches in half, removing the pit. Brush the cut face of the fruit with balsamic vinegar. Grill 2-3 minutes face down, then rotate 90 degrees, and grill another 2-3 minutes until you get crisscross grill marks. Remove, then fill the pit cavity with the mascarpone cream.
