Dry the steak and season really well. Let the steak rest for a 30 to 60 minutes so that gets to room temperature and absorbs the salt and releases the excess juices.

Dry Again and put a iron skillet on high heat with some oil, turn it when you have a perfect crust, and baste it with is own fat. Drain some fat and add garlic, rosemary thyme and some butter (not too much).

Baste it on both sides until reaches your desired internal temperature, and set aside on a rack to rest for half of the cooking time so 2/3 minutes. And here you have a delicious tasty steak…
