INGREDIENTS FOR 5 PEOPLE:
Spaghetti 500 g
Zucchini 400 g
Stracciatella 200 g
Pine nuts 30 g
Almonds 30 g
Pecorino 80 g
Extra virgin olive oil 40 g
Basil 10 leaves
4 slices cured ham
1 clove garlic
Salt to taste

METHOD:
Wash the zucchini and remove the ends. Cut them in half lengthwise and then in half again. Remove the central part with the seeds, then cook in abundant salted water for about 8 min.

Take a baking tray lined with parchment paper and spread out the slices of ham, cover with another sheet of paper and place a bare weight on it. Bake at 320°F (160°C) for about 15 mins.

Drain the zucchini in a bowl with ice and water and let them cool. Drain and transfer everything into a container with high sides, add the pecorino, basil, almonds, pine nuts, extra oil, a clove of garlic without the core and salt. Blend everything to obtain your zucchini pesto.

Cook the spaghetti in the water where you cooked the zucchini until they are cooked al dente. Transfer them into a large bowl and add the pesto and cooking water, mix vigorously. Take a deep plate and add the pasta nest.
Take the crunchy ham out of the oven and chop them on top, finally add the stracciatella. Ottimo!
