A ”Perfect Manhattan” employs equal parts sweet and dry vermouth for a slightly drier finish. This version is elevated to “Royal” status thanks to Antica Formula, the King of Vermouth of Italy’s highest quality.

MANHATTAN ROYALE

– 1½ oz bourbon
– ½ oz Carpano Antica Formula
– ½ oz dry vermouth
– ½ oz nutmeg syrup 
– 2 dashes fig and cinnamon bitters 
– Garnish: 2 cocktail cherries 

– Add all ingredients to a mixing glass and stir over ice until well-chilled.
– Strain into a chilled coupe glass.
– Garnish with two cocktail cherries skewered on a cocktail pick.

NUTMEG SYRUP

– 1 cup demerara sugar
– 1 cup water
– 4 whole nutmegs, quartered

– Combine sugar, water, and nutmeg in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until sugar is dissolved.
– Remove from heat and cool to room temperature, let sit at room temperature overnight for a more intense flavour.
– Store syrup in an airtight container in the fridge for up to 3 weeks.
