This recipe is good for weeknight dinner. It is delicious and can be prepared in just 15 minutes.
Ingredients
Serve 4
5 potatoes boiled, peeled and diced
1/2 cucumber, sliced and cut into quarters
4 large tomatoes, diced
2 eggs, boiled and diced
100 gr olives
4 tbsp pesto
salt and pepper to taste
Method
1. Add all ingredients in a large bowl.
2. Mix everything well and serve or cover it and refrigerate until serving.
3. Enjoy!
