Mango & Strawberry PANNA COTTA Recipe:
For 5 pieces ~ 270 g each

1st layer:
400 ml cream 30-35%
200 ml milk
50 g sugar
1 tsp vanilla extract (or vanilla sugar)
a pinch of salt
8 g gelatin + 40 ml water

2nd layer:
400 g mango puree
30 g sugar
50 ml of water
7 g gelatin + 30 ml water

3rd layer:
300 g strawberry puree
20 g sugar

* If desired, the cream layer can be made with cream only, without adding milk (classic Panna Cotta). Or, on the contrary, dilute the cream with milk 50×50 to reduce the fat content.
