While just sitting around watching a movie it hit me that I was becoming hungry. Mentally scanning the contents of the kitchen I was becoming aware I had nothing ready made to just grab and go so I came up with this idea. In the show I was watching the guy was making some kids a pizza in a brick oven and I remembered I had lots of salami and loads of mozzarella cheese. I knew there was no pizza sauce but I knew I had ENTOMATADA sauce from dinner the other night. 💥👍

So here’s what I came up with. A Mexican / Italian fusion clazone burrito. Mexican because of the entomatada sauce and the flower tortillas. The Italian part was just the salami and mozzarella cheese.

I just diced up some onion, bell pepper and Tomato.

The cheese was store bought shredded mozzarella and the tortillas were premade store bought as well.

I also used some pickled artichokes that It Dawned on me I had languishing In the back of my refrigerator.

Now the entomatada sauce is a tomato based sauce that goes on top of fressca white goat cheese filled rolled corn tortilla taquitos. Along with diced onions and tomatoes with shredded lettuce as a meal. Its a tangy tomato sauce thats rich and savory but not quite like a traditional pizza sauce or marinara sauce. It can be made have a little kick heat wise but In this case It was very mild.

Here are the basics ..

4 garlic cloves
3 tomatoes
1 or more jalapeños or Serrano peppers 🔥
1 large onion
2 or 3 chiles Guajiros. These need to be rehydrated by boiling about 15 minutes.
Salt to taste. All the above taste better roasted and puréed in blender.

Or If you can’t be bothered it is all the above chopped, skip tomatoes and add a jar of marinara sauce.

Now just assemble and toast it up in a pan. In this case most all the ingredients were cold out of the fridge so after I rolled up the donkeys I microwaved them to make sure the middle was warm to reduce time in the pan.

So I like to start off first with the seam of the donkey (burrito is Spanish for little donkey btw) at the bottom so that it sears closed and the donkey dosent fall apart while you flip it around.

Just give it some pan time on all sides to make sure the cheese melts and the salami gets hot. I guess you could just nuke it just I personally like the crunchiness of a toasted flour tortilla.
