1/2 lb. (225g) baby spinach
1 1/8 cup (250g) ricotta
Salt & Black Pepper
Ground nutmeg
Grated Parmigiano-Reggiano cheese to taste
All-purpose flour (amount will vary, see below)
4 tbsp. unsalted butter
3-4 fresh sage leaves
***CHICKEN CACCITORE***
Olive oil
1 whole clove of garlic
1 white onion, diced
1 large Yellow Pepper, diced
Chicken thighs
Rosemary
Bay Leaf
Oregano
Salt & Black pepper
1/2 cup (120ml) dry white wine
2 tbsp capers, diced
kalamata olives, sliced
15 grape tomatoes, halved
1 tbsp tomato paste
***TIRAMISU***
3 eggs
1/3 cup sugar
8 oz. of mascarpone cheese

1 cup of Espresso coffee
Unsweetened cocoa powder for dusting
