Fill pot with water
Turn heat on high and add salt to the water so it is as salty as the sea
add pancetta to a pan and turn heat to low to render fat
then turn up heat to crisp pancetta
in a bowl add egg, pecorino romano, and parmeseano regiano and pepper. mix
add thick spaghetti noodles to boiling salt water and boil for 11 min
don’t drain
removes noodles into pan with pancetta with tongs, mix
add a ladle full of the pasta water in noodles and pancetta mix
add egg mixture to the pancetta and pasta, mix well
Serve with grated percorino and lots of pepper
