How to prepare a pizza rustica – also known as pizza ripiena, pizza di Pasqua (Easter pizza) or pizza gaina: this a traditional finger food from Southern Italy, typically consumed during Easter. festivities There exist variations across the Southern Italian regions, this version has its roots in the province of Matera in Basilicata region. It is rather flat compared to other versions, which makes it more finger food friendly and of course jaw friendly.
The pizza ripiena has typically a bottom and a top part of pizza dough, similar to a calzone pizza. It is filled with boiled eggs, local cheese (e.g. scamorza) and local salamino. The taste is simply INCREDIBLE, and I highly recommend to try this recipe.
