Cava-Inspired Mediterranean Bowls

Ingredients:
3 large sweet potatoes, cut into cubes
1/2 head of cauliflower, cut into bite sized pieces
10-12ish large brussel sprouts, quartered
1 cucumber, diced
10 cherry/grape tomatoes, halved
1 cup of cooked brown basmati rice
1/2 lime, juiced
1 tbsp butter
Italian seasoning
Tzatziki
Crazy feta (you can buy it premade at Whole Foods)
Hummus
Feta cheese (crumbled)

Roast potatoes, sprouts, and cauliflower in oven after tossing in olive oil, salt and pepper, 25 min at 350
Cool rice based on instructions adding butter, lime juice, and Italian seasoning to cooking water
Cut cucumber and tomatoes while veggies and rice cooks
Once all ingredients are cooked, prepare bowls:
– Base layer of rice
– cooked veggies
– 1 scoop each of hummus, tazicki, and crazy feta
– Cucumber and tomato
– Feta cheese
