Italian Orzo & Spinach Soup
Ingredients:
1lb box orzo
1 1/2 c chopped carrots
1 1/2 c chopped celery
1 med chopped white onion
1 15oz can fire-roasted diced tomatoes
7-8 c chicken broth
5-6 chopped mushrooms
5-6 c spinach
1 tsp minced fresh or dried rosemary
1 tsp dried oregano
sea salt
black pepper
Instructions:
In a deep large pot heat 2 tbsp olive oil. Add onions and saute 5 mins until onions are soft and translucent. Then add celery and carrots and continue to stir until vegetables are cooked all the way through. Add garlic and season with salt and pepper and mix everything together. Add mushrooms and cook until they are soft. Add chicken broth, fire-roasted tomatoes, and Orzo. Continue to stir so the Orzo doesn’t stick to the bottom of the pan. Then season with rosemary and oregano. Bring up to a medium simmer for 10 minutes. Then add spinach and stir until spinach is wilted completely. Cook for a minute then turn heat off. Reminder Orzo is pasta and you do not want to overcook. Serve while nice and hot! EAT AND ENJOY!
