Ingredients:
-Freshly ground black pepper
-Kosher Salt
-Dry Pasta
-Eggs
-Parmigiano Reggiano
-Pecorino Romano
-Water
-First of all, in a large pot take water to boiling pasta. Add some salt to make the water salty. Without breaking the pasta put it into the boiling water and boil it for 12 minutes.
-Now cook the meet which is pancetta. For this recipe, we need 2 ounces of Parmigiano Reggiano and as well 2 ounces of Pecorino Romano. If you mix those 2 cheeses together, it will bring a better balance into the carbonara.
-Then take 2 eggs and 2 eggs yolks into a bowl. Eggs will make a more rich and creamy texture to your carbonara.
-The pancetta is ready and I like to have my pancetta is to crispy outside but soft inside.
Now take it back from the fire and let it rest.
Now mix the eggs and the 4 ounces of cheese with the freshly ground black pepper.
When pasta is ready reserve the pasta water and put the pasta into the pancetta.
Mix up the pasta and pancetta perfectly then when residual heat of the pasta that will cook the mixture of egg and cheese.
We can add a little bit of water if the texture is too thick and that water will make more creamy and emulsify.
Now it’s ready to serve!
