Fried Italian Cookies for Carnival: Chiacchiere Recipe (Angel Wings, Crostoli, Bugie)

Chiacchiere cookies can be flavored in many different ways, usually with some citrus zest and some type of liquor. Our chiacchiere are flavored with a hint of orange and grappa. You can use rum or marsala in place of the grappa.

TIP: These deep fried cookies are made just like pasta! In fact, here we use an Imperia pasta machine to stretch the dough. Your dough should be thin enough to see the shape of your hand through the pasta. Thin, well-made dough will create those beautiful flaky when you fry.

TIP: Don’t have grappa? Use rum or marsala, both of which nicely compliment the orange zest.

INGREDIENTS

flour (all-purpose or ’00’) – 2 1/2 cups / 300 g
fine salt – a pinch (1/8 tsp)
granulated sugar – 2 tbsp (about 25 g)
cinnamon – 1/2 tsp
vanilla – 1 pod / 3 g powdered / 1 tsp of extract
orange zest – from one orange
butter – 2 tbsp (30 g); room temperature
eggs – 2 whole
liquor – 2-3 tbsp; Here? Grappa
Canola or safflower oil as needed for frying

OPTIONAL TOPPINGS
powdered sugar – 4 tbsp +
white chocolate – 4 oz (114 g)
olive oil – 1 tsp
red liquor (alchermes) – as needed
sugar sprinkles
