1) Vegetable Stock Ingredients :
Parsnip / Chukandar – 1 medium size
Peeled Carrot – 1 medium size
Zucchini/Courgette – 1 medium size
Peeled potato – 1 medium size
Celery – 1 Medium size
Tomato – 1 medium size
Coriander with stems – – Handful
Water – 1.5 litters (6 cups)
Salt – 2 tsp
Note : Out of this measurement 1 litter vegetable stock can be prepared.
2) Veg Risotto Ingredients list :
Unsalted Butter cubes – 3 medium size
Oil – 2 medium size
Grated Ginger – 1 inch
Finely chopped Carrot – 1/2
Finely chopped Zucchini / Courgette – 1/2
Finely Chopped Green Capsicum – 1/4
Salt – 1/4 tsp
Peeled Tomato – 1 Medium size (add at the end)
Risotto Rice – 200 grams
Vegetable Stock – 1 litter
Black olives – 3 or 4
Chopped Basil – 4 or 5
Grated Cheese – 1/4 cup (50 grams)
Unsalted Butter – 1 medium size cube
Black pepper balls – As per taste
Grate Cheese – As per taste
