These kimchi arancini/kimchi fried rice balls are so much fun! We take kimchi fried rice to the next level and make arancini (italian rice balls) from it. Super crispy on the outside with mouth-watering fluffy kimchi fried rice on the inside, all served with a homemade yum yum sauce that is to die for!

This is a truly unique recipe and I promise you’ve never had anything like it 😉

INGREDIENTS – Serves 2 as main dish, 4 as appetizer.
KIMCHI FRIED RICE
2 cups rice
2 cups kimchi
2 tsp brown sugar
1 tsp gochugaru
1 tsp sesame seeds
1 tbsp soy sauce
2 sticks green onion

YUM YUM SAUCE
1 cup vegan mayonnaise
2 Tablespoons tomato paste
1 Tablespoon rice vinegar
1 teaspoon paprika
1 teaspoon garlic powder
1 Tablespoon sugar
1 Tablespoon vegan melted butter
salt and pepper

BATTER + BALLS
3 tbsp flour
2 tbsp corn starch
¼ cup water + more if needed
1 cup panko bread crumbs
¼ cup vegan mozz

DIRECTIONS
1. Cut kimchi into small piece with scissors.
2. Finely slice green onion. Place into frying pan with 1 tbsp neutral flavored oil.
3. Put pan on medium-high heat and let oil and green onion infuse.
4. Once schmelly good, add sugar and soy sauce directly on pan. Let bubble and thicken up, then stir with rest of the ingredients.
5. Add kimchi and cook through until most moisture has cooked off.
6. Add gochugaru and stir well.
7. Add rice and mix well.
8. Turn off heat, add sesame seeds and mix.
9. Spread kimchi in a layer on baking tray. Let cool in fridge of freezer until workable with hands.
10. Combine all yum yum sauce ingredients into bowl and mix well. Doneso 🙂
11. Bring kimchi fried rice out and form balls by scooping about ¼ cup of rice, flattening out, and adding cheese in middle. Roll into ball by using pressure and set to the side. Repeat with rest of balls. Makes about 9-10 balls.
12. Set back into fridge/freezer to firm up.
13. Prepare batter by combining all batter ingredients in a shallow dish.
14. Pour panko into another shallow dish.
15. Dip rice balls into batter, letting excess drip off, then roll in panko. Set directly in air fryer basket. Repeat with rest of balls.
16. Spray arancini/balls lightly with cooking spray and cook at 400F (204C) for 15 minutes, flipping halfway through.
17. Plate up and enjoy 🙂
