Do you love your grandmothers recipes? Me too! This cauliflower Italian-style recipe is exactly like my Nonna used to make cauliflower. It’s so simple and so full of flavors. If you love Italian food, I’m sure you will love this!
Ingredients:
1040g cauliflower
Six tablespoon olive oil
One clove of garlic
One teaspoon cayenne pepper coarsely ground
120g Kalamata olives
100g tomato puree
800ml water
Six teaspoon capers
Three teaspoons coarse sea salt (plus / minus)
Two teaspoon oregano
Preparation
1. wash cauliflower and chop it
2. finely chop the garlic clove
3. heat olive oil in a pressure cooker
4. briefly steam garlic, cayenne pepper, olives and capers
5. mix 400ml water and tomato puree
6. add cauliflower and water-tomato puree mixture and sea salt to the pressure cooker
7. cook on low heat for 5 minutes
8. release steam
9. Add 400ml water, cook on medium heat for 5 minutes and add oregano and a little bit more olive oil if you like
