This recipe originated from a small village in the mountains of Abruzzo Italy. 35 years ago, my cousin Franca in Bugnara Italy, made us this pasta dish and we have enjoyed it ever since. It is full of flavor and is absolutely delicious! With just a few simple ingredients, this recipe comes together very quickly and is amazing – hope you give it a try 🙂

Pasta with white meat sauce – original recipe from Bugnara Italy
Note – this recipe serves 2 people – for 4 people, simply double all ingredients 😊

Ingredients:
• 200 gm spaghetti
• ½ lb lean ground beef
• ½ lb mushrooms, sliced and diced
• ¼ cup beef broth
• ½ medium onion, sliced & diced (approx. ¾ cup)
• ½ carrot, grated (approx. 2/3 cup)
• ½ cup heavy cream (35% preferred)
• 1 TSP all-purpose white flour
• 1 ½ TBSP Butter
• 1 ½ TSP Extra Virgin Olive Oil (EVOO)
• 1 TBSP Chopped parsley for garnish (Optional)
• Grated parmigiano-reggiano, on the side, when serving (preferred but not required)

Process
• Start to cook your pasta in a pot of salted water
• In a large pan (pan #1), met butter with EVOO, then add carrot, onion, and mushrooms & cook ~5 mins
• Meanwhile, in a separate “dry” pan (pan #2), add the ground beef and cook until browned. With a slotted spoon, remove beef and set aside, then remove any grease from the pan. Then, in that same pan, add the cream and the flour, and cook for 2 minutes, stirring regularly.
• Now you can add the reserved ground beef to Pan #1, along with the beef broth and the cream. Mix well to ensure all the ingredients are mixed together.
• Add the cooked pasta into pan #1 and mix together until all the sauce is uniformly distributed amongst the pasta.
• Garnish with Chopped parsley (optional) and serve immediately, with grated parmigiano-reggiano (preferred)
• Enjoy 😊
