Italian Turkey Vegetable Soup #shorts

There is something about making soup that gives me such comfort and joy. I like the fact that I could add pretty much any vegetable into a soup and it’ll taste wonderful. I have made this soup many times but I feel like I am finally satisfied with this recipe! 😊
The key to good flavor is of course using good quality ingredients and seasoning properly. So many people are afraid of over-salting but in reality, most people don’t salt enough when they are cooking. It’s important to add salt and black pepper to each layer when cooking. You can have the best ingredients in the world but if it’s not seasoned properly it will taste bland.

Ingredients 🛒
• 2 Tbsp olive oil
• 1 Tbsp butter
• 1 diced onion
• 1 diced carrot
• 1 diced celery
• 3 garlic cloves, minced
• 1/2 pound ground Turkey
• 1 Tsp dried oregano, basil, rosemary, and thyme
• 1 can cannellini beans, drained and rinsed
• 1 cup heircot verts, frozen
• 28 oz can chopped tomatoes, undrained
• Salt & pepper, to taste
• 16 oz organic chicken bone broth
• 1 Tbsp parsley
• 2 Tbsp tomato paste
• 1 Parmesan rind
Directions ✍️
• Place olive oil and butter into a Dutch oven.
• Add in the onions and cook until softened.
• Add in the carrots and celery to the onions and cook for 3 minutes.
• Add in the garlic and cook for 1 minute.
• Add in the ground turkey.
• Season with oregano, basil, thyme, rosemary, cannellini beans, heircot verts, and salt & pepper.
• Pour in the chopped tomatoes.
• Pour in the bone broth.
• Add in the chopped parsley.
• Add the tomato paste and a Parmesan cheese rind.
• Bring to the boil and simmer for 40 minutes.
• Serve up and enjoy!
