This bean Italian-style recipe is extremely easy to do and convenient if you are on a budget. With only five ingredients, you can create super creamy comfort food that is also healthy. You’ll be surprised by the combination of beans, fresh lemon juice, and fresh olive oil. I personally could eat that every day.

I’ve used Borlotti beans, but you can also use white beans. Please note that the cooking time depends on what type of beans you use.

500g dried beans (e.g. borlotti or white beans)
Four lemons
olive oil
onion (optional)
chilli (optional)
sea salt
water

1. Soak beans for eight hours in water
2. Drain water, rinse with fresh water and add it to your pressure cooker
3. Cover with water
4. Cook for 40 minutes on low heat
5. Drain steam
6. Add sea salt and cook for 5 minutes on medium heat
7. Serve with fresh lemon juice and olive oil (add chopped onions and chillis if you like)

Cooking time: 50 minutes
