Borsa Italian Christmas Salad

Ingredients
1 pound bag Iceberg lettuce, with red cabbage and carrots
1 large bag Red or green leaf lettuce
1 large bag Romaine lettuce
⅔ cup Grape tomatoes
½ cup Sliced black olives
½ cup Marinated artichoke hearts
1 cup Genoa salami, chopped

Dressing
¾ cup Extra virgin or mild, olive oil
¾ cup Red wine vinegar
1 tbsp Balsamic vinegar
1 tbsp Coarse sea salt, or more to taste
½ tsp Coarse ground black pepper

Garnish
6 to 8 slices Red onion rings
2 cupsRope provel cheese (or parmesan)

Instructions
1.Combine bags of lettuce. Rinse, drain, and pat dry the lettuce. Set aside in a large bowl.
2.Add tomatoes, olives, marinated artichoke hearts, and chopped salami to the bowl of lettuce. Toss together.
3.In a smaller bowl, whisk together the olive oil, vinegars, coarse sea salt, and pepper. Combine thoroughly. Add the desired amount of dressing to the salad.
4.Garnish with sliced red onion rings and roped provel cheese.
