Bolognese Sauce

Ingredients:

1.5 Lbs Ground Beef
1 Lb Pasta
1 Sweet Onion (finely diced)
1/2 Cup Celery (finely diced)
1/2 Cup Carrot (finely diced)
3 Garlic Cloves (minced)
1 Cup Cherry Tomatoes (sliced in 1/2)
1/2 Cup Dry White Wine
29 oz Tomato Purée
1 Sprig Fresh Oregano
1 Sprig Fresh Thyme
1 Bunch Basil Leaves
Olive Oil
Parsley
Parmesan Cheese
Salt, Pepper, and Sugar

Instructions:

In a large sauce pan on medium/high heat, add 1 Tbsp of olive oil and the ground beef. Sear and brown the beef and then season with salt and pepper. Remove from the pan and set aside.

*Next In the same pan, reduce the heat to medium and add 1 Tbsp of olive oil. Add onions and caramelize slightly. Add carrots and celery, season with salt and pepper. Sauté for about 5 minutes then add garlic and cook for 1 minute. Next add tomatoes and sauté for 5 minutes then add wine. Reduce the wine by 1/2.

*Next add tomato purée, stir and season with more salt, pepper, and a pinch of sugar to taste. Add oregano, thyme, and basil to the sauce, bring to a simmer then add the ground beef back to the pan. Cook/simmer the sauce for at least 30 minutes or until the veggies are soft. Adjust the seasoning to your taste.

*(Cook your favorite pasta to the instructions on the box making sure to salt the pasta water.)

*Serve the bolognese in a bowl on top of the pasta of your choice, top with chopped parsley, basil, and freshly grated parmesan cheese. I recommend serving with garlic bread and a salad on the side.
