Nonna’s daughter Laurie is undergoing chemotherapy for Stage 3 Pancreatic Cancer. Her daughter’s Iron count are always on the low side. Beets are very high in Iron and eating beets helps with her Iron count.
When Nonna & Nonno were growing up in Castropignano, Italy they would feed beets to the pigs, they would never eat it for themselves. So why are they eating beets now? Nonna knowing that her daughters Iron was low she went and bought Beets. This is Nonna’s way of making Beet Salad …Italian Style and everyone loves them especially Nonno.
